How to Ferment Almost Anything
Fermentation expert Karen Diggs will teach us how to turn vegetables, nuts, and mushrooms into superfoods using traditional techniques and modern tools. Join Karen as she demonstrates basic kraut-making techniques, and delves into more exotic recipes including mushroom and nut ferments. She will cover the health benefits of fermented foods, and how to incorporate them into your diet.
This event will stream live on Facebook on Driver's Market page () and on Kraut Source's page (.) A Q&A on making fermented vegetables will follow Karen's talk -- please submit your questions as comments during the video feed.
Participants are encouraged to purchase a Kraut Source fermentation kit (a clever, stainless steel gadget that fits on a mason jar) to make their own ferments at home, as well as vegetables that you’d like to ferment (suggestions include raw organic cashews, shiitake mushrooms, and--for beginners--a head of organic white cabbage). Kits are available for purchase at Driver’s Market, as well as through the Kraut Source website.
Karen Diggs is a nutritionist, culinary instructor, published author, and creator of Kraut Source. She studied at the California Culinary Academy (Le Cordon Bleu San Francisco), and in the holistic nutrition program at Bauman College. Through her studies, she became fascinated by traditional fermentation methods, and was determined to share her passion for making these superfoods with her students, peers, friends, family and beyond.
